Serves 4
2 tbsp. Olive Oil.
4 Chicken Breasts, cut into strips
1 Onion, finely chopped
1 Brinjal, chopped into small chunks
4 Baby Marrows, thickly sliced
Half bottle Nando's Mediterranean / Mild Peri Peri Sauce
Half bottle Nando's Sweet Hot Peri Peri Sauce
Cooked Basmati Rice, to serve.
Method
1) Heat the oil in a large frying pan on medium heat and gently fry the onion until soft.
2) Add the chicken strips and fry until the chicken starts to brown nicely.
3) Add the brinjal and baby marrow and Fry until the brinjal is dark brown and cooked through.
4) Add all the Nando's sauce, turn down the heat on the stove and leave to simmer for 15 minutes
5) Serve with the cooked basmati rice or inside a shwarma
