Ingredients
For the Pizza Dough (makes enough dough for 2 large pizzas)
2 cups Cake Flour
1 tbsp. Sugar
Pinch of Salt
Half a Packet of Yeast
400ml Water
3 tbsp. Olive Oil.
For the Pizza Topping (Makes enough topping for one Pizza)
1 tbsp. Butter
12 Mussels, defrosted and removed from shell
12 Prawns, defrosted, cleaned and shelled
12 Plain Calamari Rings
1 tbsp Ina Paarman's Fish Spice
1 cup Tomato Passatta (or tomato puree)
2 tsp. Chopped Garlic
1 tbsp. Mixed Italian Herb
Salt and Black Pepper
1 tsp. Dried Chili Flakes
1 cup Grated Cheddar Cheese
1 cup Grated Mozzarella Cheese
Half cup Grated Padano / Parmesan
1 Wheel of Feta Cheese
1 Green Chili, chopped
Method
To Make the Pizza Dough
1) In a jug mix the water, sugar, yeast and two tbsp. of the olive oil.
2) In a separate bowl combine the flour and salt and make a well in the centre.
3) Pour the water in the jug into the centre of the flour and combine with a fork.
4) Roll the dough into a big ball and rub the outside with the last tbsp of olive oil.
5) Place the ball in a bowl and cover with clingfilm. Leave in the fridge overnight.
6) Preheat the oven to 180 degrees.
7) Divide the dough in half and knead on a lightly floured surface.
8) Roll out the dough till you have a nice thin base and transfer to a lightly floured baking tray.
9) Bake the plain pizza base for 5 minutes
To Prepare the Topping
1) Melt the butter in a frying pan on a medium heat.
2) Add all the seafood ingredients to the pan and season well with the fish spice.
3) Leave to simmer on a low heat for ten minutes.
4) In a separate bowl combine the passatta, garlic, herbs, chili, salt and pepper.
To Assemble the Pizza
1) Remove the pizza base from the oven and spread over all of the passatta mixture.
2) Top with the three grated cheeses.
3) Spread out the seafood ingredients, chopped chillies and crumble over the feta cheese.
4) Bake for 15 minutes or until the base is cooked and the cheese is bubbling.
